Crispy Bacon Sprats (Smoked Sardines)

Crisp green salad and brown bread and butter.

Cook Time: 10 Min.
What you need:
* 1 lb. sprats (smoked sardines)
* 2 Tbsp. butter or margarine
* 4 slices back bacon, chopped
* 1/4 c. fresh brown breadcrumbs
* 2 Tbsp. fresh chopped parsley
What to do:
1. Melt the butter in a large frying pan and fry the bacon until crispy.
2. Meanwhile, remove heads from sprats, if preferred, and clean large sprats.
3. Add to the pan and cook for 3-5 min., stirring occasionally, until sprats are pale golden brown.
4. Sprinkle with breadcrumbs and parsley and cook for a further 2-3 min., until breadcrumbs are crispy.
